These gluten free meatballs are easy to make ahead and freeze for later. I made a couple batches of these meatballs for one of my gluten free friends when she had a baby. She was able to tolerate this recipe and enjoyed the easy meal that it provided for her and her family.
While I prepared this gluten free meatball recipe for her family, I also made a batch to freeze for my family. If you have noticed any trend from my blog, it is that I love to multiply a recipe. Not only is this recipe easy, it is also versatile. You can use these meatballs for meatball subs, spaghetti and meatballs, in soup, or with a roasted vegetable.

Ingredients
- 1 lb ground beef – or other meat of your choice
- 1 lb ground sausage – or other meat of your choice
- 2 eggs
- 1/4 cup almond flour
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon Italian seasoning

How to make gluten free meatballs
- Preheat the oven to 400 degrees Fahrenheit.
- Mix together all of the ingredients in a bowl.
- Shape the mixture into 1 to 1.5 inch meatballs.
- Bake at 400 degrees Fahrenheit for 20 minutes or until the meatballs measure at least 165 degrees Fahrenheit internally.
- Broil the meatballs for 3-4 minutes to give them a golden brown color (optional).
- Allow the meatballs to rest for 5 to 10 minutes before serving.
- To freeze these meatballs, place them in the freezer in a baking dish or on a baking sheet. Once frozen, place them in a freezer bag. Remove as much of the air as possible before storing them in the freezer.
- To use these meatballs from frozen, let them thaw in the refrigerator overnight. Once thawed, place them in a baking dish and cover with foil. Warm them in the oven at 300 degrees Fahrenheit until warmed through. You can also warm them up in a crock pot. Add your choice of sauce and cook on low until they are warmed through.
