Ingredients

  • 3 eggs
  • Splash of milk (optional)
  • 1 cup chopped veggies (if you are using kale or spinach, add more because they will cook down a lot!)
  • 1/4 cup grated cheddar cheese
  • 2 tablespoon oil or butter, divided
  • Salt and pepper to taste

How to make a garden veggie egg scramble

  • Heat a non-stick skillet over medium heat.
  • Dice up the vegetables of your choice.
  • Add one tablespoon oil or butter to the pan.
  • Add in the vegetables and saute until cooked.
  • Remove the vegetables from the pan.
  • Whisk together the eggs, seasonings, and splash of milk (optional).
  • Add another tablespoon of butter or oil to the pan and scramble up the eggs.
  • Add the eggs to a plate, top with the vegetables, and sprinkle with cheese.
