This buttermilk substitute is something that I have made quite a few times in a pinch. Buttermilk is not something I have in my refrigerator very often. It is not an ingredient I frequently use and it doesn’t have a great shelf life. I have avoided certain recipes in the past because I have not had any on hand. Not any more! No buttermilk? No problem! It is quick and easy to make a buttermilk substitution at home.

This recipe only uses 2 ingredients. Making this substitution is quicker than running to the store to buy some buttermilk. This homemade substitution works just as well as store bought buttermilk in any recipe.

This homemade substitute may be a little more thin than store-bought buttermilk. Buttermilk is made by adding cultures to milk, mimicking the fermentation process that was traditionally used. This makes the finished product thick and tangy. While this homemade version of buttermilk is not as thick it still works wonderfully as a substitution!

Buttermilk can be used in so many recipes. It can be used in breads, biscuits, pancakes, muffins, and even mashed potatoes! This special ingredient helps to keep baked goods moist, light, and fluffy and give them a slight tang.

To make this recipe you will use vinegar, either white or apple cider vinegar, or lemon juice and add it to milk. You can use skim, 2%, or whole milk. Once added together, give the ingredients a quick mix and let it sit for about 10 minutes. During this time the milk will start to curdle and get thicker. This is normal and we want to see this happen! This buttermilk substitute is best when used right away. If not used right away it can be kept in the refrigerator for up to a week.

Below I have added a table. It shows specific amounts of milk and vinegar or lemon juice to add. These measurements are for different desired volumes of this buttermilk substitute.

If making a specific amount of buttermilk use these measurements:

Storage

  • This buttermilk substitute can be stored in an airtight container in the refrigerator for up to a week. If you do not use it right away, stir it before using if it has separated.
