Warm, hearty meals pair well with cool temperatures. As we enter the coldest part of winter, this easy burrito bowl recipe has become a staple in my recipe rotation. It is packed full of vegetables and meat and can be served in many ways.
This one pot meal is both easy to make and easy to clean up. It is perfect for busy days when there is not much time to make dinner. Ingredients
- 1 large bell pepper
- 1 small sweet onion
- 1 pound of shredded chicken, ground beef, or other meat of your choice
- 1 cup of salsa
- 1 – 15oz can of black beans
- 1 – 15oz can of corn
- 1 – 1 oz packet of taco or fajita seasoning
How to make an easy burrito bowl
- Chop up the bell pepper and onion. Add them to a deep pan, Dutch oven, or similar pot.

- Sauté the onion and pepper in oil until soft. If you are using ground beef, add it in at this point and cook it thoroughly. Drain grease. If you are using shredded chicken add it in at this point.
- Drain and rinse your black beans and add them to the pot along with the salsa, corn, and seasoning.

- Simmer for 15 minutes to let the flavors mix together, stirring occasionally.
- Serve over rice, with chips, in tortilla wraps, or in lettuce wraps. Top with cheese, sour cream, or hot sauce. Add guacamole, avocados, or salsa. You can also use green onions, freshly chopped tomatoes, or other toppings of your choice.

Tips and tricks
- If you don’t have salsa you can substitute a can of diced tomatoes or 2 cans of Rotel.
- This recipe can be made ahead of time and stored in the refrigerator until you are ready to serve it. Just warm it up on the stove or in the microwave until it is the desired temperature.

- Leftovers can be stored in an airtight container in the refrigerator for 5 days.
